In this talk, I discuss our recent research activity in photonics, acoustics and polaritonics, showing how suitably structured surfaces open exciting avenues to enable extreme wave phenomena for light and sound. I discuss opportunities to tailor waves in robust and efficient ways, in order to control their propagation, break Lorentz reciprocity and enable topological order. In the talk, I will discuss the fundamentals of these concepts, and their impact in practical technologies, from imaging and sensing to computing, both for classical and quantum wave phenomena.
